Simple Woman’s Daybook

 

Outside my window…overcast,  and chilly out!  Not my kind of spring!

I am thinking…I am tired! Not young enough anymore to stay up til 1am!

I am thankful for…my friends

From the kitchen…its decently clean…but not a whole lot going on right now 

I am wearing…grey sweat pants, black Chris Tomlin shirt

I am creating…hopefully a whole new venture for myself!Winking smile

I am going…to attempt to take a nap…we’ll see if I can get off the computer for that though

I am reading…the vampire diaries!

I am hoping…to continue my exercise routine!

I am hearing…crickets from Jers sound machine..a plane flying over the house and a faint snoring from Kat and Slinky

Around the house…its nap time!

One of my favorite things…is spending time and playing with Jeremiah

A few plans for the rest of the week:  We have the baby Shoe reveal party Thursday night, and Saturday Night Life starts up again this Saturday!!  Of course my usual lists and tasks to do also….OH and Billy has Thursday and Friday off so looking forward to that too!

“Lets Go Fly a Kite!”

Well on Saturday (3/19/11 the first day of spring!) it was absolutely gorgeous out!  After about an hour of playing on the swings, I decided to go get the kite I had bought Jeremiah!  On my way inside I asked Billy if he knew how to fly one (once he finished laughing at me, because I’ve never flown a kite) he said of course!  So off we went!

kept the line short so he could get used to it..

Outside my window…overcast, very windy but nice temp!

I am thinking…man my legs are sore from working out!

I am thankful for…my family

From the kitchen…its clean! thanks to Billy last night! Smile  Not sure whats for dinner just yet…

I am wearing…grey sweat pants, black make it right tshirt 

I am creating…a blog…well trying too..I need tips…TONYA! Winking smile 

I am going…to work out when Lucas gets picked up.

I am reading…the vampire diaries!

I am hoping…to continue my exercise routine!

I am hearing…crickets from Jers sound machine..cars driving down the road and a faint whining from Slinky!

Around the house…its nap time!

A few plans for the rest of the week:  get my list of things done around the house, have Jeremiah Skype with his g-rents in NJ, and possibly a pedicure on saturday!

Outside my window…its sunny and chilly!

I am thinking…I need to go to bed at a decent time tonight

I am thankful for…Jeremiah

From the kitchen…all is quiet!  Need to figure out what I’m making for dinner

I am wearing…grey danskin capris, black Chris Tomlin shirt 

I am creating…nothing at the moment

I am going…to fall asleep

I am reading…nothing at the moment

I am hoping…to continue my exercise routine!

I am hearing…the dinging of google chat (chatting with Tonya), and a slight snoring from Kat!

Around the house…its calm and quiet

One of my favorite things…is spending time and playing with Jeremiah

A few plans for the rest of the week:  Having lunch with my mom, Tonya and the boys tomorrow at Applebees…Jumpmania on Thursday morning, and the Lebanon Yard Sale at the Civic Center Saturday morning! I’m even more tired just thinking of all of that!

Outside my window…it’s a very rainy dreary day out…and I love it!

I am thinking…I need to finish tackling my to do list for today!

I am thankful for…my husband

From the kitchen…is a disaster!  YIKES!  I gotta clean the kitchen and load the dishwasher..also on my to do list Winking smile

I am going…to do some baking tomorrow…hopefully

I am reading…nothing at the moment

I am hoping…to start a exercise routine!!!

I am hearing…the crunching of popcorn from Jeremiah and Lucas as they watch Megamind

A few plans for the rest of the week:  Conquer all my to do lists, Thursday I’m going to get my “her did”, and Saturday gotta turn in Jeremiahs soccer form for Spring soccer!

Grilled Chicken Pasta in a Tomato Cream Sauce

 

So this is what I made for dinner tonight and I just had to share!  It is SO good!!!

Grilled Chicken Pasta in a Tomato Cream Sauce

1 lb boneless, skinless chicken breasts
Montreal Steak seasoning
1/2 pound penne pasta
2 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
½ cup chicken broth
1 (8-ounce) can tomato sauce
1 cup heavy cream
1/2 to 1 tsp salt & pepper (to taste)
1 tablespoon fresh parsley, chopped
6-8 fresh basil leaves, chiffonaded

Rinse chicken breasts in cold water. Layer between sheets of wax paper and pound to even thickness. Season both sides with Montreal Steak seasoning. Preheat grill for medium high heat, lightly oil grate, and grill chicken breasts on medium high heat for 6-8 mins each side. OR heat 2 tbsp butter & 2 tbsp olive oil in a large skillet over medium heat. Once the butter and olive oil is nice and hot, add chicken breasts and cook 5 mins each side. Set chicken aside to cool. In a large pot, boil water with 1 tbsp salt. Add 1/2 lb penne pasta noodles and boil according to package directions. Heat 2 tablespoons butter and 2 tablespoons olive oil in the skillet over medium heat. Add the garlic and cook, stirring occasionally, until garlic is tender, but do not let the garlic turn brown (about 3-5 mins). Add the chicken broth to the pan and allow to reduce by half. Meanwhile, slice chicken. Once the broth has reduced, stir in tomato sauce. Add the heavy cream and stir well to combine. Season with salt and pepper to taste. Turn heat to low. Chop the parsley and basil, add to sauce and mix well. Drain pasta and add to sauce. Stir well to coat. Serve pasta on plates, top with sliced chicken.
